Easy Refried Beans Soup Recipe

At least once a week I fall back on this recipe. I call this soupy nachos or refried bean soup. My refried beans soup recipe is so easy, it’s honestly a bowl dressed up as a soup. Call it what you may, it’s delicious. 

I first heard about this from a friend who was cooking it one day when I had gone over. It’s now a staple in our home (Thanks Durga).  

To make things easier on me and since I normally make this when I am in a time crunch, I used canned refried beans. You could easily use your home made beans. I have a super easy frijoles de la olla recipe– I like to make a big batch and freeze them. 

The instructions are super easy. Simply add the beans to a pot, add half a can of water and whisk it until combined. Add taco seasoning and let it come to a simmer. Super easy. 

It’s all in the assembly though. I like to eat mine like soup, while my hubby likes to eat his like nachos. 

Easy Refried Beans Soup Recipe

Helpful Tools You Will Need

  • Large Pot
  • Knife
  • Cutting Board
  • or Veggie Chopper

Ingredients

  • Refried beans
  • Favorite tortilla chips
  • Bell peppers
  • Onions
  • Serrano or Jalapeño peppers
  • Mexican shredded cheese
  • Lettuce
  • Cucumbers
  • Tomatoes
  • Salsa of your choice
  • Avocado
  • Corn

Instructions

Step 1

Cut all your veggies to your liking. I like to chop all my produce finely. Set them all aside into separate bowls.

Step 2

Take one can of refried beans and add it to a pot. Add 1/2 a can of water to thin them out and whisk in the desired spices. I like to use Siete taco seasoning.

Step 3

Cook them on medium-high heat for about 5 minutes until they start to simmer, and set them aside.

Step 4

If you want to add more protein you can cook ground turkey or any other type of meat or plant-based protein. I would suggest adding taco seasoning to your protein of choice.

Step 5

To your bowl take a handful of tortilla chips and crumble them all up as large or small as you like. This is up to your preference. With a ladle add 1-2 spoons of soupy refried beans, just enough to cover the chips. Add your Mexican shredded cheese and your veggies over top.

Step 6

Optional: Roast poblano peppers and sauté them with some onions, salt and pepper. Add to your soup or nachos after the beans and cheese.
