Mexican Lentil Soup is something I eat for lunch quite often. This pregnancy has been a bit harder on me because of gestational diabetes. This is one of my go to soups for lunch, I make this on Monday and eat it almost everyday for lunch. It’s delicious and most importantly, it doesn’t spike my blood sugar.
