Okay, hear me out—this is not your average veggie burger situation. These cheddar serrano Beyond Meat burgers are juicy, melty, a little spicy, and totally satisfying. They’re perfect for a weekend meal when you’re craving something indulgent but still want to keep it plant-based. The serrano and cheddar combo gives them a kick, and if you add the fried egg on top? Game over.

I make these when I want something a little extra without too much effort. The best part? They’re stuffed—like actually stuffed—with a creamy cheddar + serrano mix. And they hold up beautifully on a skillet (no grill needed!).

What You’ll Need

  • 1/2 package Beyond Beef (plant-based meat)
  • 1/2 cup medium cheddar cheese, grated
  • 1/4 bar cream cheese (softened)
  • 1 serrano pepper, diced (remove seeds if you want less heat)

  • 1 tsp Italian seasoning
  • 1 tsp dried or fresh parsley
  • 1/2 bunch chopped cilantro

  • Salt + pepper to taste

Let’s Make ‘Em

  1. Make the cheesey center: In a small bowl, mix together your grated cheddar, softened cream cheese, and diced serrano pepper. Add a pinch of salt and pepper, give it a good stir, and set it aside.
  2. Season the beyond meat: In a bigger bowl, add your Beyond Beef. Toss in Italian seasoning, parsley, cilantro, and minced garlic. Mix it all together with your hands—don’t be shy. Set aside.
  3. Heat your Skillet: Put your skillet on medium heat and let it get nice and warm.
  4. Form your patties: Take a medium handful of the Beyond Beef mixture and flatten it in your hand like you’re making a little dish. Add a spoonful of the cheesy mix in the center, then carefully close it up and press it into a patty shape.
  5. Cook ’em low and slow: ay the patties onto the skillet and cook them for about 6–7 minutes per side over medium-low heat. While those are cooking, you can toast your burger buns right on the skillet for a couple of minutes. I like to add mayo to the buns first so they don’t get too dry.
  6. Optional egg moment: If you want the ultimate burger moment, crack an egg right into the skillet and cook it to your liking. Over easy or sunny-side up is where it’s at for me. PLUS: It’ll increase your protein intake!
  7. Assemble the dream burger: Layer it all up: I go mayo on the bottom bun, ketchup on the top. Then the stuffed patty, egg, lettuce, tomato, onion, pickles if you have them, and close it up with the top bun.

Make It Your Own

  • No heat? Use a milder pepper like poblano or just skip it. For kiddos, just make a cream cheese and cheddar mixture and omit the heat.
  • Vegan version? Swap cheddar and cream cheese for vegan alternatives, and skip the egg.
  • Grill master? You can totally make these on the grill—just be gentle when flipping so the cheesy center doesn’t ooze out too soon. I did mine on our stovetop- worked great!
