Easy 6 Ingredient Tzatziki Recipe

Ingredients

  • 6 cups Greek Yogurt- Make sure to use a greek yogurt and not a regular yogurt. The consistency will come out watery. The greek yogurt is more dense which allows it to have a thicker consistency.
  • 1 Cucumber- Seedless english cucumber is a better option if you have to cut the cucumber on your own. I used the food processor to shred the cucumber.
  • 1 sprig of Dill- Fresh dill is ideal but if you only have dry dill, that will work too. You will want to let that sit for at least 15- 20 minutes to ensure the dill’s flavor comes through.
  • 1 clove of garlic- Garlic powder will work but fresh garlic would be better.
  • Salt to taste
  • 1 Lemon- you will use the lemon juice and the peel to add lemon zest,

Instructions

Step 1

  • In a large bowl add a cheesecloth ( you can find cheesecloth in any grocery store- this is the one I used) to the bottom and grate your cucumber, use your food processor with the grater insert or grate it with a cheese grater. Once your cucumber is shredded, wring out the excess water. Keep your shredded cucumber to the side and you can dump the cucumber water or use the cucumber juice to make cucumber essence water.

Step 2

  • Finely chop your dill and add it to a medium bowl.

Step 3

  • Use a garlic press to press your garlic clove (if you do not have a garlic press, you can mince your garlic. If you do not have fresh garlic you can add 1 ½ tsp of garlic powder.) and add it to the same bowl with the dill.

Step 4

  • Add 1 ½ cups of greek yogurt and the wringed-out shredded cucumber to your bowl. Note: I used a fat-free Chobani yogurt to make mine low in calories, use whichever yogurt you like but would suggest using greek yogurt).

Step 5

  • Zest about 2 tablespoons of lemon zest and the juice of one lemon to your bowl. Add salt to taste.

Step 6

  • Stir, let it sit for at least 15 minutes and enjoy.

What to Serve Tzatziki With

I love to pair this sauce with so many things, tzatziki sauce is great in falafels, any gyro roll, greek patties, and many other dishes. I also like to just use it as a dip with Pita chips, celery, and carrots. It makes for a delicious snack.

Prep Before an Event

If you are hosting an event and want to have tzatziki as one of your sauces, I would highly recommend making it the night before. All of the flavors fuse together so nicely once they’ve been sitting marinating for a while.

How long will it last in the fridge

Tzatziki usually last about 3-4 days in the fridge, keep it in a sealed container. Freezing it makes it last longer however the yogurt does separate a bit and the texture will be slightly different. You will know that the dip has gone bad when it starts to smell sour like.
