In a large bowl add a cheesecloth ( you can find cheesecloth in any grocery store- this is the one I used) to the bottom and grate your cucumber. Once your cucumber is shredded, wring out the excess water. Keep your shredded cucumber to the side.
Finely chop your dill and add it to a medium bowl.
Use a garlic press to press your garlic clove (if you do not have a garlic press, you can mince your garlic. If you do not have fresh garlic you can add 1 ½ tsp of garlic powder.) and add it to the same bowl with the dill.
Add 1 1/2 cups of greek yogurt and the wringed-out shredded cucumber to your bowl. Note: I used a fat-free Chobani yogurt to make mine low in calories, use whichever yogurt you like).
Zest about 2 tablespoons of lemon zest and the juice of one lemon to your bowl. Add salt to taste.
Stir and enjoy.
