Greek Zucchini Patties with Feta Cheese

Ingredients
  

  • 2 Zucchinis shredded and drained
  • 1 cup feta cheese crumbled
  • 1 sprig fresh dill chopped
  • 2 cups all purpose flour
  • 2 eggs
  • 3 tbsp Greek Seasoning
  • 1 bunch Cilantro chopped
  • 1 tbsp salt

Instructions
 

  • Grate 2 large zucchinis into a cheese cloth lined the bowl. Add 1 tsp of salt and sit that aside for 20 minutes.
  • In the meantime, while you wait 20 minutes, finely chop the dill and cilantro.
  • After the 20 minutes have passed, wring out all the water from the shredded zucchinis until they are completely dry. The more water the zucchini has, the harder it will be for the patty to adhere together.
  • Add the zucchini to the bowl. Add the dill, cilantro, eggs and flour.
  • Add feta and stir all the contents.
  • Mix until the batter looks well incorporated.
  • Set the griddle to medium heat. Add your favorite oil to the griddle. I used avocado oil.
  • Once its nice and hot, add the batter to the griddle forming small round circles like a pancake. Flip after a couple of minutes.
  • Once they are brown on both sides, plate them and garnish them with some additional cilantro. Add a dollop of tzatziki sauce on the side.
