Helpful Tools You’ll Need
- Bowl
- Knife
- Griddle
- Grater
- Cheese cloth
Ingredients
- 2 Zucchinis
- 1 cup of Feta Cheese
- 1 Sprig of fresh dill
- 1 tbsp Salt
- 1 cup Flour
- 2 Eggs
- 3 tbsp All purpose greek Seasoning
- Cilantro bunch
Instructions
Step 1
Grate 2 large zucchinis into a cheese cloth lined bowl. Add 1 tsp of salt and sit that aside for 20 minutes.
Step 2
In the meantime, while you wait 20 minutes, finely chop your dill and cilantro.
Step 3
After the 20 minutes have passed, wring out all the water from the shredded zucchinis until they are completely dry. The more water the zucchini has, the harder it will be for the patty to adhere together.
Step 4
Add the zucchini to a large bowl. Add chopped dill, cilantro, 2 eggs, and 1 cup of flour. I used almond flour because that’s what we had on hand, but you can use regular all-purpose flour.
Step 5
Add your feta cheese to taste, I did about 1 cup of feta cheese crumbles add salt garlic and other spices of your choice.
Step 6
Mix all the ingredients until they are fully incorporated and it looks like batter.
Step 7
Set the griddle to medium heat and add your favorite oil. I would recommend you use olive oil. I used avocado oil because that is what we had on hand.
Step 8
Once the oil is hot, add the batter to the griddle in the form of circles (like little pancakes). Flip after a couple of minutes.
Step 9
Once they are brown on both sides, plate them and garnish them with some additional cilantro. Add a dollop of tzatziki sauce on the side.
How to serve Greek Zucchini Patties with Feta Cheese
Greek zucchini patties are great to serve as an appetizer. I like to serve them with tzatziki dip. and pair it with a side of watermelon salad. I also serve this to my 2-year-old and he loves these, just add a side of fruit and they will be good to go.
